Ishii Jozo sake brewery was founded in 1870 and located in the Ashigara Plain, which is blessed with abundant water and lush greenery while being surrounded on all sides by the Tanzawa Mountain Range and the Hakone Mountain Range.The most distinctive feature of this brewery is that it uses the “Mochi Yondan Jikomi”–glutinous rice with four-stage preparation brewing method, which uses glutinous rice instead of the usual kakemai (sake rice) for the fourth and final brewing stage to produce a richer flavor.One of the recommended products is the Umeshu made with plums from the Soga Bairin, which is a specialty of Odawara, and this “Mochi Yondan Jikomi” sake.

This Umeshu (plum wine) is made with green plums harvested from the Soga Bairin. It is brewed slowly using the Mochi Yondan Jikomi brewing method.

・Sake brewery tours are available during the winter season when the brewing is in progress. (Around February) Depending on the conditions of the brewery, tours may be held without affecting the sake brewing process.
